It's the turmeric.
Turmeric is a total meme. It's quite bitter and yet has a mild aroma at best- the purpose it really serves is to add that yellow color.
That color does a great job on making those eggs look good, but that yellow coloring turns into an awful sickly color when mixed with everything else (as with essentially every 'dish' that uses turmeric), especially when it gets mixed with those greens and the red onions (another meme their culture is stuck on) and diluted with the coconut milk. If they dropped the turmeric, it would have a clean brown color instead, and it could skip the sugar (less need for sweet to fight the bitterness of the turmeric) and use the pungent, less-sweet, white onion (and in lesser amount) over the red onion. (saving our color, too)

Despite that I guarantee that tastes killer, especially for the prep time. That was l o t s of coconut milk he added, rich, but full of heat from the ginger and chili, and all those wonderful flavors easily seep through the hard boiled egg white.

I was going to make several variations of this through the next couple of days, but I don't have enough coconut milk.
