>get ground beef in bowl
>salt, pepper, and cayenne the raw beef
>finely mince half an onion and some garlic, add to beef
>whisk an egg, add
>add breadcrumbs to bowl
>incorporate all together
>form several patties
>cast iron skillet, avocado oil, caramelize other half of thicker cut onion on medium heat while doing other prep, remove after browning
>turn heat to high, possibly deglaze with red wine or vinegar if there are bits of onions sticking to the skillet so as not to burn them
>throw brioche buns into toaster oven
>add patties to skillet, wait just a few minutes for a good sear before flipping
>after flipping top with whatever cheese, usually swiss but I'm not picky
>scoop sauce from the pan over the top of the burgers before putting them on their toasted bun, top with caramelized onions and some jarred jalapenos, final touch being whatever sauce I'm craving
I've been partial to this stuff after some anon mentioned it a while back, basically Jamaican ketchup
