these go great with chorizo or eggs, one of my favorite breakfasts in east LA must try befor you die, they are simply out of this world.

It depends, there are tortilla chips that say in the package "for chilaquiles", but i prefer frying corn tortillas, and then i add the sauce.

This is my recipe for sauce (i took it from mom)

Ingredients:
5 medium tomatoes
2 chiles ancho (it could be other dry chile, like guajillo or pasilla)
1 small onion
2-3 gloves of garlic
2-3 tablespoons of olive oil (or other vegetable oil)

First you need to rinse the chile with water, and take out the seeds. After that, you boil the chiles, tomatoes, onion and garlic. Then you blend the ingredients and cook this sauce in a frying pan (adding the oil), you cook this sauce until it tastes good, and finally you add salt (as much as you want).

I like chilaquiles with "queso fresco", but you can add any cheese you like, and also cream.
