I used to do it in a pot but it was often a bit too mushy and the kombu sometimes got a bit flaky. At one point I got a decent ricecooker and never looked back.
Rinse the rice a couple of times, cook it with a piece of kombu, prepare a dressing with pic related, when the rice is cooling down add the dressing and ventilate it so it cools as you mix it up using slicing movements so as to not crush the grains.
The dressing as it is is a bit too sweet if you use mirin though so I would cut the sugar in half.

These ratios are absolutely bonkers, what in the fucking fuck. Pic related, it's the sushi dressing I use and it's already overly decadent in terms of sugar/salt.
