Whenever I see pix of eggs benedict, to me it always looks like they barely give you enough hollandaise sauce, and when I last ordered it, that was the case as well.

Anyways, maybe sometimes soon I'll try making english muffins again.

The key is letting the dough sit in the fridge for a few days. This recipe also called for a starter - which I found bubbled a lot, maybe I could have used a bit less yeast even in the starter.

This is my first attempt at making them. I feel like I made them years ago as a kid possibly, but not in the past 10 years I'm pretty sure.

I am going to stuff them with pork country pate, jam, and butter tomorrow morning for a pre-hiking breakfast.
