Germanon here. I was thinking about getting myself my first professional or semi-professional knife but the market is full of them. I took a peek in a few places in my city but the knives look overpriced to hell and back.

Can you guys share your experiences with professional knives? Which one can you recommend (e.g. chef's knives or santoku), what do you have to pay attention to, and what do you have to look out for?

Also, if someone can hook a bro up, I would be grateful for recommendations of good German knife online shops.
