Making an omelette is simple!

1. Take a glass of milk and pour it into the frying pan.

2. Cook over a low heat (we actually cook it for about 5 minutes and then put it into the oven at 180°C for 1/3 hour)

3. Now take a frozen portion of puff pastry and press it in the bottom of the glass with your thumb. Take the rest of the milk and pour it on top of the puff pastry (The milk helps to bind the puff pastry together).

4. The omelette should take about 5-6 minutes to cook. After the second side has done a nice brown color, take the pan out from the oven and pull the edge of the omelette away from the pan and into the skillet. Do this in one motion with your skillet and that's all.

5. Cook the omelette again for 2 more minutes, but this time cut the omelette into 2 large pieces instead of the 4 small pieces. I also cut the cheese to the size of the omelette. Make sure you keep cooking both sides of the omelette. Once the cheese has melted and the omelette is almost finished, cut the omelette into 2 and allow to cool completely on a pan with only the tiniest amount of oil (just enough to hold the omelette). My husband thought I should at least cut the omelette into 4 pieces, but I feel that this ensures that the omelette keeps its shape well. Since we already had egg omelettes, we decided to skip the egg mixture and just cook the cooked omelette using a paper towel to steam it.

6. Once cooked, place omelette on a plate lined with paper towel to steam thoroughly for 2 more minutes. Once finished, turn the omelette so the white side is facing up and serve.

7. Take a Pumpkin.

Tip: Eggs and potatoes are traditionally served with a small fried turnip on top.

1. Take your liquid egg whites and beat with a mixer until frothy.

2. Fold in the melted chocolate. Stir until completely incorporated.

3. Pour evenly in a plate or bowl, and refrigerate. Keep in the fridge for up to 2 days.

The next step is to make the yolks.

1. Bring a large pot of salted water to a boil, and add the milk. Cook for 2-3 minutes, stirring constantly. Once the mixture boils, return to a simmer and cook for about 5 minutes longer, or until thickened and foamy.
2. While the egg mixture is simmering, prepare the yolks according to package directions.

3. When the egg mixture is well blended and the yolks have cooled, beat them with an electric mixer on medium-high speed until thick and creamy, about 2 minutes. Add in the milk and vanilla and beat until incorporated.

4. Take the pan off the heat and spoon the whipped cream into the baked omelette.

5. Drizzle with maple syrup or splurge on cinnamon/sugar sprinkles.
The inspiration to make these treats started from my interest in making omelettes using light and flaky vegetable shortening. One of the best parts of them is that they are only 2 ingredients!
