Cooking chicken usually isn't worth the hassle, if I'm gonna bother cooking poultry I tend to go for duck. But I'm more of a beef guy so I just tend not to buy chicken

I haven't had it in years because I stopped eating meat but one of our poorfag meals growing up was rice and hamburger. Literally just exactly what it sounds like, fried ground beef and instant rice thrown together. Probably had it once or twice a week.
Hot ______ sandwiches were pretty regular too, just leftover meat (usually chicken) between two pieces of bread and gravy poured on top, eaten with fork and knife. I only recently learned this is a Canadian thing...
These days my go-to cheap food is rice/stir-fry, just throw a bunch of vegetables in a pan with some spices and add leftover rice. Cans of black beans and bags of frozen vegetables do the trick for cheap. Easy to make an excess of and have leftovers for days after. My favourite thing to add is pickled hot peppers.
