I really enjoy restaurants where you can watch the kitchen from your table. Crush in Toronto is like that, and there is a little place where I live now that's the same. I like places where they don't hide behind doors, and places with kitchen basements are right out. I fear the large chains with huge staff turnovers and folks who don't give a shit.

Good point about the omelette. I never understood why people eat breakfast out, when it's the simplest and cheapest meal to make at home. Exception being a smoked trout eggs benedict which I would never attempt due to reasons you discussed.
