I've got a really nice bone in lamb shoulder that I want to slow cook and wondering how I should go about it.

So I made a rub with toasted cumin + sechuan pepper + fennel + chilli flakes + salt ground & some 5 spice. Got it resting in the fridge overnight.

Next step tomorrow is to brown it in a dutch oven in some ghee, and then cook minced garlic + ginger + chilli in the fond and deglaze it with stock or shaoxiang wine or chinese cooking wine really not sure what liquid would be best and braise it in the oven at around 150 cuck degrees for a few hours with star anise & cinnamon.

But i've never slow cooked lamb before and it's a really nice bit of meat that I don't want to fuck up, so any tips or ideas as to flavours or anything?

I'm also really not sure if I should fully or just partially cover the meat with liquid while it cooks.
