Home-made jerky advice please.

I like to make my own jerky, I use a dehydrator since I don't know any better methods, but I have a problem. My last batch was venison meat, and after I took the pieces off the racks, they got all sticky on the surface.

The recipe I used to soak the meat in was a bottle or so of soy sauce, about a half of a box of brown sugar, some liquid smoke, and seasoned with garlic powder, onion powder, chili powder, black pepper, salt, and red pepper flakes and I left the meat drying for a full night.

Is there a reason why it got all sticky, and any advice for making home-made jerky? Some recipes would be great to, I like spicy and peppery flavored jerky myself.

Can it be made well in a fan forced oven, not a dehydrator? If so, how?

What are the best marinades for it?

Jerky in a sweet marinade.
Especially deer jerky.
God damn.

Sweet things during active entertainment, like vidya.
Salty things during passive entertainment, like movie time.
