trying to convert from starbucks, i got a clever dripper for xmas

what are some flavorful beans to buy? price is no object, looking for a great experience. i saw one mentioned a dozen threads ago that was a three letter named company
how do you know how coarse of a grind to make a specific batch?
how do you get the water to be an exact temp (from what i read it was just before boiling)
