I read one of this dude's books in middle school. There was always something I remembered specifically from one of his books. He described how objects of necessity become more of a "fashion statement" when it becomes cheaper for a group: Clothing is for warmth and is used as a fashion statement; water is for hydration and now people have fancy fountains and own fancy bottles as a fashion statement; phones were for communication and are now a fashion statement - in the same way, food simply for survival at the more expensive and highest level is ultimately for pure enjoyment and fashion, both for those who make the food and those who consume it.

You ask why it hasn't died yet. Well sorry to say, but honestly man, it's never going to die. Living conditions and wealth are only going up. Lots of people going up on the hierarchy of needs, and self expression is high up there. The food is great, it's entertaining, and its a hell of a statement to those dining with you (and those watching your social media). People don't just want good food for hundreds of dollars - they want the creativity that they could never get on their own or from basic chefs.

It's only a cash grab if the chefs are lazy. Some of my family members went to some high end place for a special occasion. It was artsy, but the food was fucking terrible - portions were small, and some parts were basic af like asparagus among unedible flowers. They went to a mcdonalds after. On the other hand, me and siblings once went to a diff high end place and the food and presentation was fucking excellent and filling! The shit i would never be able to do myself. Depends on where you go i guess
