You can't fuck up lentil soup very easily, it's so good. Sorry for my offhand measurements/instructions, but, this is how I do lentil soup most of the time and it always turns out delicious.

>1/3 cup red lentils
>1 1/3 cup vegetable or chicken stock
>Small fistful of cilantro
>1/4 of a medium-sized yellow onion
>2 red thai chili peppers
>1 clove garlic
>Curry powder
>Lime

Sautee chopped onion, chilis, garlic and cilantro in a bit of coconut or olive oil on medium-low heat. Don't burn anything, keep the heat low but still hot enough for everything to be sizzling/steaming. Once the onions are lightly coloured and somewhat transparent, add the stock. Bring to a boil. As soon as it starts to boil, reduce heat, add lentils, add curry powder and lime juice to taste. Reduce to a LOW simmer, simmer covered for like 20 minutes or until delicious texture is achieved. If you burn it even slightly it will develop an awful flavour, keep the heat low and stir every few minutes. This makes enough soup for one person's meal or two people's side dishes. It's moderately spicy with 2 peppers but you can add more/less depending on what you like. I usually serve it with some kind of bread or flatbread.
