no you don't.

'field dressing' is pointless unless you are literally an hour or more away from your cooler and ice.

just poke a knife under its chin, put the hook in and hang it. slit from breast to chin, slit around the neck under chin. take off arms and legs at the joint. pull skin off about half way and lift the deer higher and pull it off the rest of the way. now you can take the back straps, the shoulders, the thighs/butt, those little sheets in between the shoulder and neck.

the only cuts not accessible now would be the tenderloins, which you can actually get to without removing entrails if you are very careful in putting your hands behind the visceral sack.

and then you use a machete to decapitate it as it hangs. that's the funnest part.
