recent chicken with vegetables (carrots, celery, onions, potatoes, garlic) underneath. spatchcocked it and salted it and let it rest in my fridge for about 24 hours. I chopped some thyme and rosemary and mixed it with butter, then stuffed it under the skin right before roasting it at 450F until the breast was 160.
