>cook 1-2 cups rice with raisins through it (preferably in homemade chicken stock, not water)
>mandolin or very thinly slice ~4 carrots
>saute the carrots in a big pan/ wok with quite a lot of olive oil (and rendered chicken fat from your stock if you have it) until they reduce in size, be patient, take them as far as you can, and almost burn them (black a bit on the edges)
>add lots of smashed whole garlic cloves (small ones from the middle of the head preferably) nearish the end and brown those with some butter too
>add chopped parsley right at the end and saute that a bit
>bloom a pinch of saffron in a little boiling water
>chop some roasted walnuts
>fluff rice and add to pan, mix through, fry a few minutes, add the saffron and the walnuts
>season with salt and pepper
>do some caramelized onions too if you want but that's pretty tedious and not worth half assing

If you really thinly slice carrots (better, with a mandolin), then saute them in a very decent amount of oil/ butter/fat, eventually they will caramelize. Be patient. Almost burn them. All the water will leave them, they'll reduce in size by around 3 times, they flavour the oil and they turn delicious. Then throw in some rice and fry the rice in the butter/oil for a while. It's gonna look like pic related.

Well pic related is a lot more things as well but caramalysing thinly sliced carrots and then frying rice in that butter with the carrots is delicious by itself. Some lemon juice & zest as well would be nice.

'Meal prepping' just means cooking a large batch of food a week in advance, and portioning it for convenience
It's not a stupid or redundant term, because it refers to a more specific thing than just preparing meals or taking leftovers.
It absolutely makes sense for time poor people, anyone trying to lose weight, people trying to save money and stop buying lunches or just anyone really.
There are lots of good meals which will keep well for 5 days in the fridge or freezer. Hardy vegetables like carrots or broccoli for sure will stand up to that, as will rice, pasta, potatos, most meats, any stew or curry (although reheating these is a smells issue). It's not 7 days because most people don't work on the weekend. Lots of people do 4 days and then buy food on friday. Like both the pictures ITT.
I don't understand why you're so scornful of this.

You can for sure eat well like this. Just because people flexing it on instagram or whatever like the pics ITT do it badly doesn't mean it's a bad practice.
