Who cares what tyrants eat? You should be interested in what your local dairy is producing, try that first. My favorite cheese is produced by a small dairy run by two ancient immigrants from the Azores, they're making a version of Sao George called Saint Jorge you can only get here and it's incredible. It's a little expensive, mostly the problem is finding it. There's a closer small dairy, Pedrozo, making a cheese called Northern Gold that's probably my 2nd favorite and it is largely obtained by turning up to the farmer's market before noon.

Unless it's a full on medkit fondue euro cheese is kinda boring. Brit cheddar is really good in omelettes though, for some reason.

California - A cheese called St.George made by one farm in Sonoma county which is an american version of an Azorian cheese called Sao George. It removes all the problems with the original cheese like being too salty and having crunchy salt bits while also adding more richness and cheddar-like flavor. It's like everything good about italian cheese fucked everything good about english cheese and then for no reason it has this perfect edam-like consistency. It's so expensive and you can only get it in the faggot ass bay area.
