As other anons have said, a nice thick cut sourdough is perfect. I'm also partial to some Texas Toast.

For cheeses, you can literally use almost any soft, melty cheese. I usually just use whatever I have leftover that needs to be used up. If I had to pick a perfect blend, it would be Dubliner White Irish Cheddar, and some ricotta smeared on either side.

Don't forget to use butter or mayo on the outside of your bread, and don't use too high of heat.
