Tell me about thermometer probes, are they essential? Can a regular instant one do the same job?

season the prime rib heavily.
put in probe thermometer, set the oven to 225F.
put the prime rib on a rack in a roasting pan, and take it out at 125F and let it rest 20-30 min while you crank the oven to 500F.

pop it back in for 10-15 min to brown up the outside and you're done- perfect prime rib, one of the easiest (and most delicious) things you can make

So wait... if I stick this in the steak when I first put it in the oven, aren't I pushing bacteria into the middle and making it unsafe to eat rare?
