Lettuce: depends on how big or how much you get, you can either make a salad, or blanch them in salted water with 10g of lard, plate, then douse in sauce: garlic, soy sauce optional, sugar, oyster sauce, pinch of salt, thicken however you want, lard for sheen.
Whip up the egg whites until soft peaks, and fold into the yolk (don't forget to season). Bake and finish with cheese on top under the broiler until golden brown. Or just use a kitchen torch to brown the cheese on top.
