My Mexican shepards pie, or "Shepuardo's Pie", which was universally condemned by /ck/, even though it tasted great. ;_;

This is a Mexican shepards pie. Before you get butt blasted about me using the term "Mexican", keep in mind I didn't think of this until I got home and could only use the ingredients on hand (critically, I had no tomato/tinned tomato/tomato paste - I would add it next time but it was still hell of good without)
First thing, peel, dice and get those potatoes boiling. I used two large ones
Sautee red onion, garlic, chilli powder, dried coriander
Brown 1lb beef, add corn kernels and red capsicum (bell pepper)
Add some chicken stock and/or bit of water, gravy mix to thicken it up.
Simmer until tastes good, pour into pie tin. Top with layer of cheese (I used tasty)

Drain potatoes, add a knob of butter, grated cheese. Let them melt, add a dash of milk and mash it up. Finely chop coriander (cilantro) and add to mash. Gently spoon over mince in tin, spread it out so it evenly covers the pie. Use a fork to make the ribbed pattern all over (helps the potato brown).
Put the whole thing into a hot oven for about 30, or until potato goes golden and brown and crispy

Serve with steamed vegetables. Both consumers said it was very good. As always I forgot to take a nice picture, what you see is now to be tomorrow's lunch.
