There's lots of evidence of sauces, preserves, roasts, medicines, etc from ancient central american culture that used tomatos, tomatillos, and all manners of capsicum. millions of people living in some of the most advanced civilizations of their day didn't survive on salsa smeared on a jungle leaf anon. i feel bad that we have very few surviving recipes to reference
