Look they make them in the same places and they're clearly different and I can't tell you why exactly. Let me try. The taco tortilla is round and it's served flat with the toppings on top while the quesadilla tortilla is oblong and is folded while it cooks so it retains that shape.

Alright, it's the shape. If it could be rolled into a tube, it's a taco, otherwise it's a quesadilla. Thin steak never goes on quesadillas, and I guess all available fillings can go into tacos but most are reserved for quesadillas.

You're not wrong in that all of this type of Mexican food, garnachas, is extremely similar, and they all have a lot of names for basically the same thing because of regional differences. If you add the extra layers of marketing to americans and turning it into fast food products, you end up with the taco bell chalupa, that actually resembles the gordita, and the gordita, that resembles hell on earth.
