I am cooking some Thrice Cooked Chips right now.

They take a three step cooking process to do it right but they are the best fries on the planet.

Not in my experience.

I use russet potato also and it takes alot longer then a 10 min boil.

I dont think you are getting the same end result that I am.

I am following the recipe of an acclaimed 3 Michelin star chef.

The Fries I am having with my steak take at least 3 hours to cook.

They are Heston Blumenthals Thrice Cooked Chips.

That means you boil the chips till they start to break apart and you cool them down and then cook them at 265 till they dry out the potato in the fryer and no more steam comes out.

Then you cool them again and do a Final Fry @ 375 till they are crisp.

When you take them out they are like shards of Glass they are soo crispy.

And when you bite into them they are full of fluffy potato.


They are the most Amazing chips you will ever eat.

I just use a regular vegetable cooking oil.

But the fries I make are the crispiest most amazing fries you have ever had in your life. They crunch like glass shards in your mouth and are full of fluffy airy potato.

It has nothing to do with the Oil really.

It has everything to do with the way I cook them.

I cook them 3 separate times.

Its called Thrice Cooked Chips and they are the best fucking chips in the universe.
