damn dude, nice braiding! that looks gorgeous. i also do the no knead shit and i've been solely baking with sourdough for the last year. any chance you can do a sourdough challah or is that ridiculous?

and thanks. it's got a bit of emmer and danish oland ww flour, and it's delicious. shaping the lower hydration dough was way easier and i was able to get the skin pretty tight, so the spring and ear ended up pretty nice.

i made this a few weeks ago, fig and walnut sourdough. i'm gonna try to make a date and pecan loaf later this week.

honestly i usually have 1 or 2 slices from each loaf i bake, and i bake about once a week. i just really enjoy the process of baking sourdough, i find it soothing and interesting. i usually leave 1/3 a loaf for my housemates and distribute the other 2/3 of the loaf to my bf and my coworkers.

turned out well. next time i'll toast the walnuts before adding them to the dough.
