I should study more about our own country, it's full of bizarre ways to cook stuff, every little village has some dish than only it's made there...

The north has some of the best cuisine in Spain (the best being the med part, i'm totally biased tough), Pais Vasco does a lot of interesting fish dishes and has the pintxos than are a bit like tapas but not really, Cantabria and Asturias are great too but are less known, but the king in seafood is Galicia, very comfy and with a very "Keltic" feel, Pulpo a feria is delicious and very simple.
