What chinese cleavers do the pro's use? I want one of those nice razor thin cleavers you see them using at chinese restaurants, but im having a hard time finding one, i own one of these Winco KC-101 cleavers, and while its awesome for what it is, its twice as thick as i was expecting it to be, ive seen the Dexter Russell cleaver recommended, but from what i can tell it is a similar thickness to my Winco, looked at the Wok Shop cleavers too and i cant find much information on their cleavers, i want to be sure its a nice thin cleaver (1.5mm to 2mm thick) before ordering since it will be $20 international postage. i even went and had a look around china town but all i could find were kiwi knives and these horrible looking cleavers which looked like they were made with angle grinders by 12 yearolds.

tl:dr Who knows a good cheap thin chinese cleaver
