Poached eggs on tomatoes is great
there are recipes for poached tomatoes over marinara/tomatoe sauce.
but i feel its better when you let the natural flavors of the tomatoes.
oil pan, cook sliced tomatoes on low heat until they are soft. throw salt and pepper while they cook. throw eggs on top, cook till poached, serve on top of toast.
its a humble and delicious breakfast.
