Potatoes are supposed to be hardy and known for their long term storage capability compared to most produce, but every time I buy a bag half of them are full of rot and the other half start rotting if I don't eat them in a day

I'm trying to improve my curry recipe. I make blocks outta flour, butter and S&B Golden curry powder and some cayenne for heat. When I actually make it to eat I typically use chicken breast, carrots and potato. What else can I add to get some more variety in there?

My wife insists that potatoes are just big beans, her argument is that they both have skins and similarly-textured interiors. I know she's wrong but I'm not smart enough to argue this point. I get that there's probably some dusty old book that says "potatoes are tubers, beans are seeds" but WHY are potatoes tubers? What makes a potato different from a bean?

Are potatoes healthy or not? I've heard they're empty calories with a high GI that spikes your blood sugar. I've also heard they're close to a perfect food and that you can survive almost solely off of them.

Does color matter? I've heard purple/red ones have lower GIs and more phytonutrients/antioxidants.
