Yeah, that's my main gripe with Cholula, but I still eat it.

Anyway, spring is almost here, so it's time to think about planting your own peppers. A lot of people try to gatekeep saucemaking, but really all you need to get started is a few handfuls of peppers, salt, white vinegar, and a blender.... no fancy fermenting for 9000 months in a sensory deprivation chamber required. Not saying that other stuff isn't cool, just not required for a perfectly enjoyable product.
