My mom always orders/cooks my steaks well done for me because she thinks anything else will make me sick and is gross. How do I convince her otherwise?

I tried telling her that I liked a steak that wasn't well done, but she just said that it was gross. I feel like people are judging me at restaurants when she does it too.

I love my steak rare and I can't believe that some people like their steak well done. My mother used to make it well done and it's always been dry and chewy, only edible with lots of sauce. But more and more people seem to argue that you "just need to do it right". Some people say that a well done steak can still be juicy and tasteful. But I couldn't find any proper tips on how to do it. I wanna try it (with a cheap cut) and make a direct comparison. Is anyone experienced with this?

What the hell just happened? Newb here.
I bought some New York Strips to cook nice and rare. They were about an inch and a half thick.. I don't know what I was doing but I fried them on high on a cast iron skillet to try and sear the sides real fast, then I threw them in the oven to warm them up to a 140f which the meat thermometer said would produce med-rare.
Anyways to cut the story short, my meat read that it was about 100 degrees Fahrenheit, but was completely Well Done, What did I do wrong?
What I need help understanding is, everywhere I've been reading says that that temperature is unsafe for meat consumption and they never raised above it (I checked decently often) But they looked pretty burn and tasted very dry.. Not to mention they weren't little steaks either.

Everyone here was saying I should have just seared them etc etc. Preparation aside I just want to understand how big steaks weren't heated to a proper temp but still burned? What should I do next time? Thanks in advance.

TL;DR: Meat temps were very low, but meat still burned to Well Done. How or why?
