Humans have been modifying the genetics of plants and animals for 12,000 years. It's called agriculture. Grow 100 plants, find the plant which has the biggest most eatable seeds to plant and eat the other 99. Or do you think that Corn or Broccoli grew like that in the wild in the Mesolithic?

Complaining about GM organisms is dumb.

They didn't have wheat. They had corn, which they milled.

Ancient corn was basically wheat but through Amerindian farming techniques we obtained hundreds of modern varieties of corn. Pic related, on the left is Teosinte, another descendant of ancient corn that more closely resembles its ancient form. In the middle is a hybrid of the two.

tl;dr: Populations that aren't used to affluent diets don't process them the same way that affluent populations do. In other words, what is healthy for them may not necessarily be healthy for you and vice versa.

P.S. It doesn't say in the paper but I read an editorial that explained that the affluent diet was computed by either a dietitian or a nutritionist based on how much daily activity the subjects had on average (i.e. if an affluent American picked up the Tarahumara lifestyle they would be recommended the affluent diet in the experiment).
