Just flour and seasonings is not Popeye's, it's just a standard ass chicken sandwich recipe that everyone uses. I have cooked plenty of fried chicken in my lifetime and 90% of the time it is a mix of flour, garlic powder, salt, paprika, and maybe a couple other spices. As I said, Popeye's uses something else for their breading besides just flour, probably corn starch, which Josh has zero of in his recipe.

Generally, most of these fast food copycat recipes are just a gimmick for views that feature simple recipes with a "fancy" ingredient as a twist. However, I will say his bread game is on point and I do think his bread videos are the best he has. He should probably just stick to that. pic related are his buns and chicken sandwich I did. The chicken was okay, the "Japanese milk buns" were fantastic though and are great for burgers or hot dog buns.
