I guess that gay blog post would be my gimmick.

I'd serve shit I knew people would love, and stuff I knew people already loved. But I wouldn't advertise that shit anymore or less than I would occasional events and new stuff I had on shelf. I'd reach out to radio, social media, the streets, etc. and even hire someone to be a consultant for that kind of shit. I could find a few PR, Advertising majors, or Pop Culture studies majors in about any medium sized town who could handle that shit like a fucking pro.
I'd hire servers and waiters who have either a similar or greater amount of interest in food and alcohol as I do. You don't miss work because you don't feel like getting out of bed, and if I catch customers acting shitty I'll personally remove them myself. But a bouncer or some security would be cool to have on staff as well.
