Corn tortellini, roast corn, butter poached spot prawn, prawn reduction and poaching butter sauce, chanterelles, shaved yellow plum, basil

Really happy with how these tortellini turned out, filing is just a puree of corn poached in corn stock, it sets up enough when it's cold that you can easily form the tortellini around it but when it's hot it runs like an egg yolk when you cut into the pasta.
