I have tried to make a good vegetable chili at least eight times now; each time, I've failed miserably. It seems that no matter what recipe I use, and no matter what the recipe's photo looked like, I come out with a pungent, sweet red slop. Every single recipe comes out looking and tasting the same. I don't know what I'm doing wrong. I can't identify what is so awful about the outcome, but a main point is that no matter how much spice I add, it is disgustingly sweet. This is due to the tomatoes, but I have no idea how to counteract it. The pungent flavor I can't identify--but I like every spice used, individually--except chili powder, which I don't use outside recipe calls. Do any of you have an inkling as to what I'm doing wrong? Because I'm fucking up everything, but I don't know how exactly.
