IPAs are one of the most nuanced and complex styles out there. If you think they're one-note you're either drinking bad IPAs or aren't drinking them fresh. And just like any style, a good IPA will be balanced. The reason so many brewers love IPAs is because they're one of the most interesting styles using just the basic 4 ingredients of the Reinheitsgebot, and the range and depth of flavor you can achieve is pretty much unsurpassed. It's a more expensive and involved beer to brew, but it's the best way for a brewer to show of their skill and personal style. If you can make a really good IPA, 80% of all the other styles will seem pretty simple in comparison.
