Once the dough has rested we can start cutting off portions and rolling it into long snakes, as thick or thin as you would like, then cutting them to length. As long or short as you’d like.

Then optionally using a gnocchi board we’re going to gently, but firmly, press roll the logs, using either 2/3 fingers, or a butter knife.

The little log should ideally not stick and should slightly curve, leaving a little hollow portion on the inside.

Fun fact, cavatelli means little hollows!
