Ever since I saw these old time recipes that employed bread in sauces and soups and looked at a few other recipes in passing I've started deliberately making or buying a bit more bread than we'll end up using to use it for things like acorda and ribollita or just really slapdash refrigerator velcro soups based on broth, stale bread, and whatever needs to be used up in the fridge.
