Orange-lime jalapeno pepper mash. I'm gonna see how long I can physically go without opening it and make some sauce with it, it'd be good with some garlic and light vinegar. But mash can take months for flavors to develop.

Okay first update, I will have one more after this if it's successful, then I will post them when they are done. moving on, I got some new glass weights that I added to my ferments, wide mouth sized that will prevent mold completely. I also received some plastic wide mouths lids and 1/2 gal wide mouth jars. Soon I will have some airlocks and and grommets I can drill and fit for the jars that will also eliminate the need for me to burp my jars. Super excited to get this down, as it will simply indicate whether the labs are going and I won't need to burp my jars and mess with them. I will pray for no kahm yeast though, that was an issue my previous peppers.
