if you want to get into japanese cooking fish sauce and sesame oil will be essential. fish sauce is a big flavor booster in general even for something like a bolognese sauce. there is one standout product but it's pretty expensive

yea forgot about that one but you have to be really careful there otherwise it turns into a salty fish bolognese. as for the fish sauce red boat is nothing like the other ones but it's also much more expensive

try this fish sauce. it's pretty expensive, about 10€ for 250ml but it's on another level compared to other fish sauces. you'll never buy anything else again. there are also 500ml bottles for about 14€ which is really fair considering the quality
