Posted last week about my soft opening, we did the public one tonight:
- We were just doing burgers, jojos, and slaw and made a 10x profit, sold out, in the first hour
- Literally everything was made in-house, dried our own salt to make our own tajin to season everything with, buns were made with potatoes we grew, local wheat that one of our neighbors grows that we milled ourselves, with in-house sugar (malt, honey, pollen), raw (frozen to get around pasteurization laws) goat milk, yolks from our ducks for the aoli and bread - only way it could have been better is if we killed our goats and rendered their tallow
- We served what would be an easy 50 dollar dinner in Manhattan for ten dollars and I did all of the work myself. I spent 50 dollars myself and there was no other overhead. Everyone's happy to work for tips and I took none, and cooked pretty much fucking everything, was baking bread up to the last second.
-Our orders started coming in 15 minutes before service because front of house got horny

FoH manager was telling me to sleep tomorrow but I have only a week until the next one and there is gardening to do.

I've been posting on here since 2006 and have been the neetest of neet, have not given a single fuck about myself or whatever garbage I've shoveled into my body, told my parents to go fuck themselves, worked shitty restaurant jobs just to not be homeless because autists can be cooks (just not servers). I made it, guys. So can you.
