If i use pic related, would it be possible to create a coffee syrup sort of thing and store it in a fridge for a week and have it be somewhat fresh?

I was thinking about creating super thick and concentrated syrup with lotta sugar in it and then just pour that into milk glass with some ice in it and have that as refreshing coffee drink in the summer on hot days. It sounds delicious in my head, but I'm not sure if the coffeine holds up in these conditions or if the taste goes stale after few days.
