Bit late to the thread but im Nigerian. Our food is pretty nice desu, although at first it may not be as aesthetically pleasing as, say, Italian or Chinese dishes.

We have lots of soups
>Okra
>Ogbono
>Egusi (personal favourite)
Soups are traditionally served with pounded yam or gari, but you can eat them with rice as i do sometimes myself.

Rice dishes
>Jollof rice
>rice and stew
both tomato based, except with the first one the tomatoey sauce is essentially mixed in, the latter has it on top.

Desserts
>Chin chin
>Puff puff

Im quite tired so couldnt go into much detail, but these are just some of my favourites that id 100% recommend. Also, if looking at recipes online, make sure the author is actually a Nigerian or at least West African.
