Even outside of fish, most shellfish are better a few days after catching because it gives them time to purge their digestive tract.
I'm a coastalnigger and have had many clambakes/crabfries/etc with tidal forage I got the same day, and while it's still delicious, seafood benefits from having a few days for flavors to intensify and organs to clean themselves out. There's something to be said about eating fresh catch off the dock, but it's more based on perception and experience than actual objective flavor
