you could make barszcz z uszkami (a type of clear borscht with tiny pierogi inside)
pierogi are usually eaten on their own. I guess you could add some Polish salad on the side, like mizeria or ćwikła (the latter goes better with meats though)

anyway, I would pick from:
>barszcz
>żurek (sour rye soup)
>bigos (add forest mushrooms for extra based effect. preferably Porcini, the most highly-regarded mushroom in Poland)
>gołąbki (cabbage rolls)
>schabowy (Polish spin on the schnitzel)
>potato pancakes (the "placek po zbójnicku" version with spicy meat stew on top is great)
>whatever version of pierogi you want to make

I'm mostly familiar with the Polish version. it's sweet and sour, savory, a bit earthy and can be a bit spicy as well (not with chillies though, but pepper and other herbs)

about to eat some deliciously intense sour, sweet and spicy borscht with meat-filled dumplings
every cuisine has some good shit. just because americanized italian and haute cuisine french food is the most famous doesn't mean other parts of Europe don't have good food

anyway, can't wait to have some barszcz with uszka tommorow, as well as christmas bigos ofc, probably my favorite dish in all of Polish cuisine

these little dumplings that are usually put in polish-style borscht are known as "uszka", which means "little ears"

Polish Borscht is sour and a bit sweet, usually with lots of garlic, pepper and herbs
it's pretty intense, which is why you need something meaty to go along with it - usually dumplings with meat or mushrooms, but a bun stuffed with meat / mushrooms also a popular choice
