Since more Americans have been gravitating towards low-fat milks because of all the government warnings against saturated fat consumption over the decades, more and more cartons of fatty whole milk has been left unwanted on the dairy shelf, creating a surplus. But now the government is trying to fix this problem through Dairy Management by forcing dairy products into the American diet, primarily with cheese.
