Why is it so hard to find decent coffee that isn't stale garbage that has been sitting in open air warehouses for nearly 2 years before it even gets roasted?

Bonus points if it's "local" or online micro roaster garbage like happy mug, they just sell the cheapest open air garbage they can get their hands on and people will still buy their $16/lb stale shit because it's LOCAL and you gotta BUY LOCAL!!
They're not incompetent, they know exactly what they're doing.

If your beans don't have an oily sheen when you open the bag, they're stale as fuck.
