How many minutes per pound do you cook an 8.5 pound bone-in pork shoulder? Some sources are saying 30 minutes per pound at 350, some are saying 20 minutes per pound at 425.

Making meat sauce in a crock pot. Cook the onions and garlic like normal, brown the meat in the oven, than throw it all in a crock pot on low and let that bitch simmer for hours, beat becomes super tender and allows the meat to become a single consistency. Thoughts?
